Isomaltose (6-O-α-D-Glucopyranosyl-D-glucose) is a disaccharide similar to maltose, with an α-(1-6) linkage, while maltose has an α-(1-4) linkage[1]. Isomaltose is a metabolite produced by Escherichia coli (strains K12, MG1655)[2]. Isomaltose can be used as a substitute for sucrose and is suitable for people with diabetes and those with a predisposition to diabetes[3]. Adding Isomaltose to cattle feed can serve as an effective and rapid energy source, helping to maintain milk productivity and animal health[4].
